Maple-Sweet Potato Casserole

There are many recipes for sweet potato casseroles. Here are two variations on the theme.

1 large (40-ounce) can sweet potatoes, drained
2 tablespoons maple syrup
4 tablespoons butter
4 tablespoons brown sugar
½ cup pecans, chopped

Preheat oven to 325° F
Place the sweet potatoes in a large bowl. Add the maple syrup. With an electric mixer or potato masher, mash the potatoes. Spread into a 1-quart casserole dish. Combine the butter and brown sugar, and sprinkle on top of the potatoes. Sprinkle with pecans. Bake 20-30 minutes, until hot, or cover and microwave 2-3 minutes until hot.

Serves 6

Candied Sweet Potatoes

1 can (40 ounce) sweet potatoes, drained
2 cups miniature marshmallows

Preheat oven to 325° F.
Place sweet potatoes in a large bowl, and mash using an electric mixer or a potato masher. Spread into a 1-quart casserole dish. Top with the marshmallows. Bake for 30 minutes, or until the marshmallows are lightly browned and starting to melt.

Serves 6
