1 lb. red skinned potatoes, scrubbed and quartered
The grated zest and juice of one lemon
3 tablespoons olive oil
1 tablespoon fresh thyme, or 1 teaspoon dried
Preheat oven to 400° F.
Spread the potatoes onto a baking sheet. Mix together the lemon zest and juice, olive oil and thyme. Pour over potatoes and toss to coat. Bake for 10 minutes. Stir, and continue baking until done, 10-15 minutes more. If desired, sprinkle with additional lemon juice and garnish with whole sprigs of thyme.
