1 1/2 pounds red potatoes, skins on, quartered
3-4 tablespoons olive oil
1 tablespoon Italian seasoning
2 teaspoons garlic powder
parsley, chopped for garnish
Preheat oven to 400 °F.
Toss the potatoes with the olive oil, Italian seasoning and garlic. Bake until the potatoes are tender, about 20 minutes. Sprinkle with parsley before serving.
